As Executive Chef of The Inn at Bay Harbor - A Renaissance Golf Resort, Chef John Ives oversees all culinary aspects of The Inn at Bay Harbor's award-winning Sagamore's Dining Room, The South American, The Inn Cafe, Cabana Bar and Grille, and The Inn's catered events.
A graduate of the Culinary Institute of America, Chef Ives honed his culinary expertise at Mustard's Grill in Napa Valley, CA, and locally at Andante Restaurant in Petoskey.

Chef Ives' culinary creativity will be instrumental in establishing The Inn and particularly Sagamore's, as offering one of the best food and beverage experiences among Renaissance Hotels & Resorts in North America. One of the key ingredients towards creating the ?uniquely Renaissance? guest experience is that restaurants and catering events in Renaissance Hotels & Resorts are developed to appeal to local clientele as well as guests. Each restaurant has a clearly defined and unique concept. Executive chefs develop their own menus, marrying dining trends with regional influences and ingredients. To that end, Chef Ives has created a menu with international flair using local produce and inspiration.
Savor one of Chef Ives' three signature entrees: Grilled Porcini Dusted New York Strip served with Sour Cream Mashed Potatoes, Chilean Seared Sea Bass with a Miso Glaze or the Grilled Szechuan Pork Chop served with mashed Orange-Sweet Potatoes.
