What is the Flavor Profile Presentation?

Learn to recognize and appreciate the subtleties of wine as certified wine and spirits specialist Bill Borre leads you through the tasting process.

Borre brings nearly 30 years of experience to the table. After receiving a degree in restaurant management from Michigan State University he went to work in Grand Rapids managing the Amway Grand's full service restaurant. From restaurant management he moved on to representing E & J Gallo's various wines and spirits, and currently represents Napa Valley's Jamieson Ranch Vineyards.  Borre has also taught for more than 10 years at the Great Lakes Culinary Institute and last year spearheaded the wine curriculum at the Les Cheneaux Culinary School.

Now you can take advantage of his expertise during the Flavor Profile Presentation, Saturday, October 22. This two-hour, interactive presentation takes place from 2-4pm and begins with a blind evaluation of sparkling, red, and white wines. As a judge for numerous wine competitions, Borre will take you through the judging process so you can learn to evaluate wine based on sight, smell, and taste.

Afterwards discover how different flavors pair with different wines. Beginning with a simple dish of protein (chicken, fish, and beef) you will build up each dish's profile with different spices and flavors and progressively taste heavier bodied wines.

By the end of the two-hour presentation you will walk away with a newfound ability to evaluate wine and distinguish different tastes and flavors along with the knowledge to pair wines with your favorite entrees. Skills any wine aficionado would be happy to acquire for only $25!

Afterwards we invite you to test your new skills at the five-course sparkling wine dinner with special guest Larry Mawby, featuring wines from his L. Mawby Winery in Suttons Bay. Cheers!
